Summer vacation is here!!! I cannot begin to tell you all how excited I am!!! The tart above here is amazingly delicious! Strawberry Mascarpone Tart with a hint of orange and almond in the filling!
Before I could begin summer vacation I had challenge. The first challenge was from my sweet, well mannered, funny, hard working (yup…I’m on vacation!!) students. They didn’t believe that I could cook! I tried to tell them that this website existed. But not one person pulled out their phone to verify this as I spelled out the website address. Hmmm. So the challenge was on!
I figured I would have a successful menu with two things: sugar and some type of breakfast sausage. So…I made a batch of sweet dough in my bread machine (yes – even a girl has to have help sometimes!) and hand rolled a million little balls of dough in a cinnamon/ sugar mixture. I dropped the million balls of sugary, cinnamon-y dough into a bundt pan (newly acquired from my Grandmother!) and poured a ton of butter/ brown sugar over the whole darn thing. It baked up beautifully. Not sure if you can tell but a piece magically fell off the top of the cake. I must have had a mouse in the house?
I also made an overnight egg and sausage casserole. Whoever invented the overnight casserole gets my props. It’s simple. The only ‘not simple’ part of it was I was up at 5 a.m. baking off a casserole to take to school! Also in the mix were blueberry yogurt muffins topped with a little cinnamon and sugar love. The kids loved the breakfast! And..I love cooking for people so it was a win-win situation!
Second on the list was a bbq for some music alums. It was great to catch up with my old students and meet new people as well! What a fantastic day – the weather was beautiful – and there were smiles all around! Happy summer! Now I am off to find projects to do which will keep me busy…anyone want to cook?
