The Secret

I often wonder if there is a magical secret to living life. What makes us get up and go each day? Where does inspiration come from anyhow? I have needed some fresh, new ideas to breathe a little life into my cooking and my own self lately. I have felt incredibly stuck and needed a boost in a huge way. There were two little secrets discovered this weekend…

New burger buns

First up was a grilled burger. I needed energy…in a big way…so I turned to this burger. Nothing fancy. Just a grilled burger sitting pretty on some arugula, greek goat cheese (from a local Vermont cheese maker by the way), horseradish dijon mustard, red pepper relish. You know…the usual right?! But look closely…see the buns? Cute, eh? Thanks. They are grilled pizza dough buns! Am I a cooking genius or what?! It was very tasty and worked well in a pinch.

I was relaxing at the end of the day yesterday and another bolt of food inspiration hit me. This is a major event in my world – I don’t often get two cool ideas in one day!


Lemon. It was sitting right there waiting to be used. I haven’t blogged about the latest theme and variations on that Single Lady Pancake I adore so much. In fact, it hasn’t been talked about in so long some of you readers may think I have gone and become un-single. Not.true.

So here is the latest variation: grate in some lemon zest with your  teaspoon or so of sugar and let it hang out for a bit and get happy.
Mix together 1/3 c. flour, 1 T. oats, 1/4 t. baking soda, 1/2 t. baking powder, a pinch of salt and that lovely zesty sugar. Mix in 1/4 C. + 2 T of buttermilk, 2 T. + 2 t. oil, a splash of extract (vanilla or almond are my faves). Then add in the fun – today I added in some chopped dark chocolate, craisins, and coconut. Do you realize I just typed out the recipe measurements from memory. Is that a good thing? I will have to ponder that. The result? A happy, thankful and grateful woman hanging on the porch with a cup of coffee, reading the Sunday paper in the bright sunshine.
