This blog is brought to you by the letter S…short and sweet. I had a squash sitting on my counter…not just any squash…a spaghetti squash. I have had spaghetti squash a time or two and never really thought it was amazing. That wasn’t until I met this new recipe. Before you read any further go out and get your hands on this beauty!
Tracy over at Shutterbean had a recipe for Roasted Spaghetti Squash with Mushrooms. I like mushrooms but I still wasn’t clamoring to the kitchen to make this. The problem? I wasn’t reading past the main ingredients…when you take the roasted squash and pair it up with sauteed mushrooms, garlic, red pepper flakes, golden raisins, fresh parsley & basil, and parmesan cheese? The results:
But we all know it doesn’t count until someone else tastes it right? Well Sweet Z and I both had another little taste of this. If you are a die hard pasta fan this probably will be hard to wrap your taste buds around. The delicate squash paired with the meaty mushrooms give the substance to the dish. The red pepper adds a little bite and those golden raisins counter that with a hit of sweetness. The fresh herbs and cheese add the perfect touch. This recipe will be replacing my comfort food craving for mac n cheese this winter!!!!
For dessert I had made up a special cake…it is called the Winning Hearts and Minds cake by Molly Wizenberg. I have blogged about this cake before. That was when I was cooking for one. Well now I have a special someone to share that special cake with.
