It is hard to believe that the entire week of vacation is nearing the end. So what did I manage to make over the week? Only one new recipe! Hey…I was on vacation…with Anna Karenina at my side!
The recipe of choice was African Groundnut Stew. The reason behind this particular recipe? Well I wanted to start in on my 35 Things for my 35th year list. I have 9 dinner parties to throw with 9 different themes. Sweet Z and I invited some dear friends over for dinner before we caught a Hugh Masekela concert. It only seemed fitting to make this recipe. I typically shy away from new recipes for company. Although if I am going to complete this challenge I need to take a few chances!
I had researched many recipes on African stew and settled on this recipe. It was simple in the ingredient department as well as preparation. Some recipes call for chicken – but I didn’t want to take this route for some reason. I felt as though it would be hearty enough over some quinoa with a side spinach salad.
I chopped up vegetables, added in the spices, liquids and the let the pot simmer away. I sampled…
There you have it. Sweet potato, onion, garlic, ginger, peppers, tomatoes, a dollop of peanut butter and spices. Serve it over rice, quinoa, or couscous and top with cilantro and peanuts for added deliciousness. A side salad rounded out our meal.
This recipe will make A LOT (read: 10 CUPS). I am headed to warm up a little dish of this soup. I am also off to see how Levin and Kitty are doing…milking every moment of the last days of vacation…
