Yotam Ottolenghi has a fabulous cookbook, “Plenty”. Have you seen it? It is chock full of wonderful vegetarian recipes! Sweet Z and I wanted to test out the “Stuffed Portabello Mushroom with Tallegio Cheese” recipe. What a smart move! Wait, does this mean since it was his idea he gets all the props?! Hmmm….
The results..oh my. First off there was a fair amount of chopping involved. All sorts of things got all chopped up…fennel, sundried tomatoes, garlic, mushroom stems…
I would be remiss if I didn’t give props to the chef of the evening. I was the sous chef for this portion of the dinner. But Sweet Z…he totes has things under control. Sneak peek into my kitchen…photos unedited.
In the end I seared some scallops and served over wilted swiss chard….which my Mom brought by. All I did was salt and pepper the scallops. I heated up a frying pan with olive oil to medium/ medium high heat to sear these scallops. I also had a pan of swiss chard wilting simultaneously in another pan (again with olive oil and salt and pepper)…just call me Miss Multitasker!
We dined al fresco, with candles burning and conversation churning. A wonderful night! I remembered to look above and thank my lucky stars for such wonderful company and food. Check out Yotam’s cookbook, “Plenty”!
