Grilled Plums

A simple recipe for you today. Kitchen ideas have been running round and round in my head lately. One day grilled plums entered my mind. I wanted a simple, quick and fuss free dessert. The wheels started turning in my head…

I took some mascarpone cheese and paired it with some confectioners sugar, a splash of almond extract, lime juice and zest. Fresh mint also had a hand in things. This was mixed up and refrigerated until ready to use. It was a happy marriage – or so I thought.

Red plums were halved, given a little coat of olive oil and grilled, turning occasionally, on low heat until tender and extra juicy. I had some ladyfingers hanging out in the fridge. I layered some ladyfingers in a fancy glass and brushed Cointreau over them. The minty mascarpone cheese was added on next then a dollop of whipped cream, drizzle of pomegranate molasses and dark chocolate speckles rounded out the dish.

And there you have an easy dessert that takes mere minutes to pull together! Remember the life lessons that I had written about last week? Well, I trusted my instincts, had a bit of patience and was happily surprised with the outcome!
