I don’t know about you but as the weather turns cooler I want comfort. Not yesterday, not tomorrow, but NOW. The berry crops are dwindling, people are ordering cords upon cords of wood for the long winter months ahead and then, there is me. I do a celebratory happy dance when I pluck a ripened cherry tomato before Mr. Nuisance Squirrel spies it! Tell me this is a part of the little things in life, please?! However, every now and then it pays to take a dip into fall comfort just a wee bit early. On the menu today? How about a classic zucchini muffin?! You cannot go wrong!
If you are short on time and wanting to make a quick muffin recipe this is the recipe for you! I turned to Simply Recipes for this zucchini muffin recipe. It is a straightforward muffin recipe. I adapted this slightly as I went through the steps. I was not really feeling the raisins or nuts at the moment…so I left them out. So you mix up your wet ingredients – sugar, eggs and vanilla. Then you add in the star ingredient…the zucchini which gets all grated up and groovy.
In a separate bowl mix up your dry ingredients. I just sift these together…I feel as though it somehow lends a lighter end product. That could be my want-to-be-food-science degree at work though? I digress. If possible use freshly grated nutmeg…you will thank me later!
After your wet ingredients and dry ingredients are folded GENTLY together put them in a muffin tin! Boom!
They get baked up and before you know it you have a snack or breakfast that is ready to grab and go! Perfect for back to school morning chaos. Perfect for crazy mornings when your coffee machine breaks but you will still have a delicious to eat! It is equally as perfect on a quiet morning filled with the last of the summer sunshine before fall is ushered in. Enjoy!
