I was ready to commit on this brilliantly sunny, chilly fall day. The plan started creeping in days ago and I simply could not shake it away. Every day I thought about slightly differing the ingredients. A little cinnamon here, and a touch of spice there. An idea formed days ago and I¬†committed¬†to writing my very own recipe idea today. It was a day of celebration…

Kale Salad with Roasted Squash

It started out with taking a step towards taking a little care…of me. So care I did. I paused. For the first time, in quite some time, I took more than one second to look out the window at the birds at the feeder happily eating their thistle seed in the cold, early morning light. The junco birds were out playing with the chickadees at the feeder today. I listened. Later on in the day I heard all of the birds chirping happily in the woods beyond the rock wall fence in the road. The dog was panting, with a happy grin, at having a long walk to go on. I planted my two feet firmly on the ground. I pushed myself today with a hard training session – and though my abs are now screaming, I am finding some comfort in this pain. I created. I brainstormed this salad recipe days ago and was so very happy I gathered the courage needed to try this idea out in real time. No recipe to follow….instinct guided my way.

Note: I have also adapted these to be little appetizer bites – fall party anyone? Cut out some puff pastry rounds, bake them up, fill them up with the kale salad fixings and you are ready to entertain. Drizzle some extra pomegranate vinaigrette over the top to make it extra fancy!
