Roasted Vegetable Soup

Today I want to share a roasted vegetable soup recipe with you. It is fairly simple and so forgiving. Chopping gave my mind a chance to calm down. Roasting gave me a chance to relax a little. And pureeing simply put a huge smile on my face Р I used my new immersion blender. It is all about the simple things in life.

This recipe involves roasting a tray of root vegetables that have a drizzle of olive oil, salt and pepper.

Sweet Potato, Squash, Carrots, Red Pepper

 Sauteing a pan of aromatics

Wild Mushrooms, Apples, Leeks, Onions, Sage & Thyme

Combine the two with some chicken broth, adjust salt and pepper as needed. I added a dash of Five Spice Powder and white wine…for good measure. I pureed it up, added some fat free half and half and garnished with thyme and candied ginger pieces.
