Roasted Carrot Fries

I stepped into the shop at the appointed date and time, but, the lights were off on my usual side. I doubled checked my iPhone – yes, I had a hair appointment that day. I pushed aside a little sparkle of hair and knew I was in the ballpark of needing a lift. A miscommunication…so I was going to shine brightly for another week. Fine. I will shine. How do you deal with the ‘unexpecteds’ in life? Do you roll with it? Do you get mad? Do you stress eat?

Roasted Carrot Fries

I drove home, roasted some carrots and pretended they were sweet potato fries. A simple slightly sweet glaze, a little time to roast and you will forget all about french fried food.

What do they roast up to look like, you ask? Sorry…I was distracted eating a pan of carrot fries.

Carrot Fries for One


  • 3 medium sized carrots, peeled
  • 1/8 - 1/4 teaspoon freshly grated nutmeg
  • 1/2 Tablespoon Balsamic Vinegar
  • 1 Tablespoon Olive Oil


  1. Preheat the oven to 425*. Peel carrots and slice into matchstick fries, placing in a large bowl. In a small bowl combine the oil, balsamic vinegar and nutmeg and whisk to combine. Combine this dressing with the carrots and toss to mix well. Put the carrot fries on a rimmed baking pan and roast at 425* for 25 - 30 minutes. Toss a few times so the carrots may roast evenly and turn golden brown.
