I meandered through the farmers market in my new town. I spotted a beautiful display of freshly picked produce. I had my sights set on beets. Why didn’t I pick up some fresh bread, or more veggies? The beets were just calling out. No explanation. I usually roast beets…but this time around I wanted to use the beet greens.
I thought if kale makes a tasty, crispy, snack wouldn’t beet greens be just as tasty?
- Beet greens
- Olive oil
- Salt, Pepper
- Line a baking sheet with parchment paper. Preheat the oven to 350*. Wash and dry beet greens, arrange them on the baking sheet. Lightly oil the beet greens (I find an olive oil spray works great!) and sprinkle with a bit of salt. Bake for 9 minutes, or until gently crisped!
