Ginger Mint Tea

Hello, new year. It is time to set things round right. I am over the holidays. It was an amazing time of indulging in fabulous food and other shenanigans. I think it will take me the entire year to recover! The first step? How about making a batch of spicy ginger tea. When a cup of comfort is what you need, this tea is a great go-to.  As the ginger root and water simmered I tossed in a half stick of cinnamon.

Mint Ginger TeaFinally, I added some fresh mint to the bottom of the mug and poured the ginger tea over top.

Mint Ginger TeaA beautiful tea that gets better with time! A spicy, full bodied tea with a hint of mint and a tiny touch of sweet is the perfect reset button for 2014. Cheers, friends!

Ginger Tea


  • 4 cups water
  • 1 cup sliced ginger
  • Optional additions:
  • fresh mint leaves
  • cinnamon sticks
  • pinch of cayenne (great for cold season)


  1. Bring the water to a boil in a medium sized pan. Add the sliced ginger and cut the heat back to a rolling simmer for 20 - 30 minutes. I added in a half cinnamon stick for the last 10 minutes. If you are adding mint you can add it during the last 10 minutes of the process.
