These cookies you see above are studded with zesty lemon and lime with little hints of fresh thyme throughout the sweet biscuit. Oh my…Joy the Baker you have done it again!
One of our Sundays with Joy projects was this cookie…not quite a sugar cookie but a wafer type cookie. The first step was zesting:
Mixing with sugar:
In my stand mixer I creamed together butter and this citrus sugar. Adding in the thyme, then milk and an egg. The flour mixture gets added in and then the dough gets rolled into a log.
This gets to hang out in the fridge overnight. The next day I rolled out the dough and baked off the cookies!
I loved the subtle twist on these crispy cookies. The flavors, I think, slightly developed even more after they were baked. I halved the batch and made the mistake of adding the whole egg vs. the half. I was thinking the other egg was going to be incorporated later – and realized after the fact – that it was for an egg wash glaze. Oops. I have a feeling the cookies, though light and crisp, would be even crispier/ wafer type had I not made that mistake. Next time I make these I will update this post! I shared these and had some very happy friends!
