One of our Sundays with Joy recipes to make was Chewy Coconut Almond Raisin Granola Bars. With a title like that one thing was certain – these granola bars would be tasty! I improvised on this recipe a little bit – it was what I had on hand and you will see why a simple and straightforward recipe took me hours. Yes, hours! To start – my changes. I had sunflower seeds, golden raisins and currants as my add in ingredients.
Oat flour, brown sugar, and flaxseed meal are some other staple ingredients
There was a bit of mixing…easy peasy, right?
At this point, NQGBebe had napped enough and wanted to be in on the action. So, he joined in on the fun…and napped a little more!
We patted the mixture down and I popped it in the oven. From this point on I was juggling the demands of the baby and granola bars.
Joy suggests to let this cool on a cooling rack for 30 minutes and then pop it in the fridge for further cooling.
I eyed the clock and let this cool for 30 minutes before setting it in the fridge. Here is where I got mixed up. These days, my mind keeps constant track of time in a different way. Every time I look at the clock, my mind automatically calculates what time the last nursing session was for the baby and when the next session might be, asking the constant question: How much time do I have? Needless to say, my mind did not keep track of the granola bar cooldown time. And I forgot to set the timer. Time did pass and I grabbed the bars out of the fridge, cut them and they crumbled! I wasn’t surprised and did the next best thing….
and turned it into granola cereal! No tears or sadness here. This flavor combination is a win-win in this house.
…one day I will make these into bars again…and carefully count the minutes on the clock!
