Dinner in a Flash!

I was flipping through a recent issue of “Bon Appetit” and stumbled upon an article using pantry ingredients. With a quick check of my cupboards, and one shallot later, I was on my way to creating a fast dinner! IMG_2007Good olive oil is heated, minced garlic and a shallot get added to the pan along with some red pepper flakes and capers. A half cup of panko is tossed in and everything gets toasty golden brown.
IMG_2013This mixture got tossed with some hot pasta, an extra splash of olive oil, more parmesan cheese and a hit of lemon juice to brighten up the dish – and to remind me that spring is coming. I am not sure why the thermometer is only reaching 27* today…

This dish was fantastic for a few reasons – literally you need to boil water for pasta, and have one big skillet to saute the garlic, shallot, capers, panko and red pepper flakes. Easy? Yes! It is a great alternative to boring marinara over pasta. This dinner paired nicely with a hearty salad and was ready in under a half hour! I started this as Sweet Z was giving NQGBebe his bedtime bottle and by the time the baby laid his head down to sleep (for a few hours anyhow), dinner was served!
